The flavors of love under a starlit sky

AS soon as the month of love kicked in, Radisson Blu Cebu offered a preview of its Valentine’s Day special: a five-course plated dinner with a glass of sparkling wine and a bouquet of roses. All this under the stars in the hotel’s sprawling, well-manicured garden.

The sumptuous five-course dinner flowed from the kitchen of Radisson Blu’s Urban Table, courtesy of Chef Coke Semblante, the hotel’s spirited sous chef. Chef Coke enthused about the various techniques and methods he used to prepare each dish, such as sous-vide (vacuum-sealed water bath) and simmering some ingredients for hours, even days.

But what Chef Coke takes pride in the most is Urban Table’s use of many local ingredients and how they’re sourced. And it’s not just farm-to-table sourcing, it’s foraging, as Chef Coke explains: “We actually gather local produce from different areas in Cebu. I would go all the way to towns like Argao to personally forage from the gardens and farms there.”

These foraged ingredients end up at the Urban Table, where the chefs skillfully prepare them with other ingredients to create memorable dishes, such as the five-course Valentine’s dinner: Hibiscus and beetroot cured salmon, waterleaf puree and trout caviar as starter, Creamy chicken dumpling in pandan oil soup, Slow-braised fish, mixed quinoa with lobster sauce, Grass-fed beef tenderloin, beer foam and organic mixed vegetables with marble potato and tablea-infused red wine sauce, and Chocolate raspberry heart for dessert.

And if that’s not enticing enough, couples enjoying their five-course plated dinner on Feb. 14 at the Urban Table garden will be serenaded by home-grown artists of 22 Tango Records, for only P2,250 per person.

Couples and families can also opt to taste the flavors of Valentine’s Day love at Feria in a delectable dinner buffet with a glass of house wine and roses at P1,950 per person. A pre-Valentine weekend dinner buffer can also be had at P1,450 net per person from Feb. 11 to 12.
